Penne with tuna, tomato and sweetcorn
This is a simple dish that is ideal for children
This is a quick and easy recipe, which is great when you've had a busy day and want something fast and tasty for dinner.
Ingredients - Serves 4 Adults
- 300g penne pasta
- 1 medium red onion
- 6 medium fresh tomatoes
- 150g / 5oz tinned sweetcorn
- 1 teaspoon vegetable oil
- 300g / 110z tuna canned in brine
- 1/2 tablespoon balsamic vinegar (optional)
- 1 small handful basil
- Black pepper to taste
Method
- Cook the penne pasta in boiling water according to the instructions on the packet
- Peel, wash and chop the red onion, tomato and basil, and drain the sweetcorn
- Heat the oil in the frying pan and cook the chopped onion for 6 minutes, stirring occasionally until soft
- Stir in the fresh tomatoes and cook for 2-3 minutes until heated through and beginning to soften
- Drain the tuna
- Add the tuna, balsamic vinegar, sweetcorn and basil. Heat for 1 minute
- Stir in the pasta
Serving Suggestions
Serve with some wholemeal bread or bread roll

If you prefer, you can replace the tuna with chicken
