Greek pasta salad

A perfect summer lunch


This salad is a real crowd pleaser at a BBQ. It's so easy to make and is basically summer in a bowl. The perfect salad to pack and take to work too.


Ingredients - Serves 4 Adults

  • 250g of pasta
  • ½ cucumber
  • 200g of feta
  • 1 red onion
  • 125g of cherry tomatoes, halved
  • 20ml of olive oil
  • 1 tablespoon of red wine vinegar
  • 2 teaspoons of dried oregano
  • Juice ½ lemon

Method

  1. Cook the pasta according to packet instructions.
  2. Drain and cool under cold water.
  3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice and dried oregano.
  4. Halve the cucumber and cut into thick slices
  5. Place the pasta, cucumber, red onion, tomatoes, crumbled feta cheese and dressing in a bowl and gently mix, then serve.
