This vegetarian take on the classic Chilli Con Carne will leave you feeling full and happy. This dish is full of vegetables and is a great way to ensure you're getting your 5-a-day


Ingredients - Serves 2 Adults

  • 140g / 5oz. of basmati rice
  • 10 medium mushrooms, sliced
  • 2 small green peppers, deseeded and diced
  • 2 small red peppers, deseeded and diced
  • 2 small onions, peeled and diced
  • 2 cloves of garlic, peeled and crushed or finely chopped
  • 2 teaspoons of vegetable oil
  • 1 teaspoon of chilli powder
  • 1 small cinnamon stick
  • 1 teaspoon of cumin seeds 
  • 2 small tins of chopped tomatoes (554g / 16oz.) 
  • 2 small tins of mixed beans, drained  
  • 2 teaspoons of tomato puree
  • 2 teaspoons of mixed herbs
  • 1 lime, juiced
  • 2 tablespoons of fresh coriander, chopped
  • 2 tablespoons of low-fat natural yogurt

Method

  1. Boil the rice in a large saucepan according to packet instructions, leaving out any salt.
  2. Heat the oil in a non-stick frying pan and fry the onion and garlic for 2 minutes.
  3. Next add the chilli powder and cinnamon and cook for another minute.
  4. Add the pepper, cumin seeds, tomatoes, mixed beans, mushrooms, tomato puree, herbs, lime juice and season with a little freshly ground black pepper. Cover and simmer gently for 10 minutes.
  5. Serve your chilli with the rice and top with the yogurt and fresh coriander.

Serving Suggestions

Sprinkle with low-fat cheese before serving
