Traditional cranberry sauce
Suitable for vegetarians
Forget the jarred version and amaze your family by making your own delicious cranberry sauce! This is very simple to make and will give your Christmas dinner that little something special!
Ingredients - Serves 10 Adults
- 120ml /4 fl oz. of port
- 100g / 3½ fl oz. of dark brown sugar
- 280g / 10 oz. of fresh cranberries
- 250ml / 8 fl oz. of pure orange juice
- Grated rind of one lemon
- Grated rind of half an orange
- 8 cloves
Method
- In a saucepan, boil the port and sugar together for a few minutes until the sugar dissolves
- Quickly reduce the heat to simmer, and stir in the cranberries and pure orange juice
- Cover and add in the cloves and the grated rinds, simmer for 30 minutes and keep a close eye on the mixture remembering to stir occasionally
- Simmer until about two-thirds of the cranberries have burst and the rest remain intact
- Take a spoon and taste a small amount to check it is not too tart, if so add more sugar to taste
- Remove from the heat to cool, and then serve. Keep any leftovers in a covered bowl in the fridge and use within 3 days
Serving Suggestions
Serve and enjoy with your Christmas dinner. This sauce can also be used in leftover turkey sandwiches!
