Sausage and sage stuffing

Christmas wouldn’t be Christmas without stuffing! This is our tried and tested recipe for making delicious stuffing
Ingredients - Serves 24 Adults
- 900g / 2 lb of good quality sausage meat
- 2 garlic cloves, peeled sliced
- 1 medium onion, peeled diced
- 3 slices of wholemeal bread
- 1 medium egg, beaten
- 1 tablespoon dried sage
- 1 tablespoon water
Method
- Make breadcrumbs from the bread by cutting slices into quarters and blending in a food processor until small crumbs are created, or grate into breadcrumbs using a cheese grater
- Put the breadcrumbs, onion and sage in a large mixing bowl, add the water and mix thoroughly
- To this add the sausage meat, finely chopped garlic and egg and mix well
- Use this to stuff the cavity of the turkey to no more than 10% of the weight of the bird
Serving Suggestions
If you have any stuffing left over; grease a loaf tin and put the stuffing inside and roast in the oven until it is golden brown on the outside and there is no pink meat left in the middle
