Pork stir-fry
Quick, easy & tasty
This recipe is a quick and easy one, which is great when you’ve had a busy day and want something fast and tasty for dinner!
Ingredients - Serves 4 Adults
- 450g / 1lb of lean pork fillet
- 1 clove garlic, finely chopped
- 1 medium onion, finely chopped
- 6 button mushrooms, thinly sliced
- 1 pepper, thinly sliced
- 2 medium carrots, thinly sliced
- 1 tablespoon of reduced-salt soy sauce
- 2 teaspoons of corn-flour
- 1 dessertspoon of vegetable oil
- 1 chicken stock cube dissolved in 150ml / ½ pint of boiling water or homemade chicken stock
Method
- Cut pork into thin slices
- Mix the 150ml / ¼ pint chicken stock with the soy sauce. Blend the corn-flour with 1 dessertspoon of water add to the soy sauce and mix to a smooth paste
- Heat the oil in a large frying pan. Add the pork and fry until well browned
- Add the onion, garlic and carrot to the pan and fry for 2 to 3 minutes
- Then add mushrooms and peppers to pork mixture and continue frying for 2 to 3 minutes
- Pour the stock mixture into the pan and bring to the boil, stirring all the time. Simmer for 5 minutes
Serving Suggestions
Serve with brown rice or noodles as it helps keep your fuller for longer
