Loaded mac'n'cheese

Enjoy this tasty mac'n'cheese recipe as part of a balanced diet. This recipe is also low in sugar.


Ingredients - Serves 2 Adults

  • 1 small head of cauliflower
  • 100g macaroni
  • 10g butter
  • 10g plain flour
  • 200ml semi skimmed milk (1% fat)
  • 70g low fat cheddar cheese, grated
  • sea salt and freshly ground black pepper
  • 50g baby salad leaves to serve

Method

  1. Break the cauliflower into small florets and steam for 10-12 minutes or until tender when pierced with the tip of a sharp knife. Tip into a bowl and blend to a puree or mash.
  2. Meanwhile, melt the butter in a small pan over a medium to low heat. Stir in the flour and cook for 1 minute, stirring quickly to make a glossy paste (roux).
  3. Remove from the heat and gradually pour in the milk. Whisk with a balloon whish until smooth after each addition.
  4. Bring to the boil, then reduce the heat and simmer gently for 5 minutes, stirring occasionally, until smooth and thickened. Stir in the cheese and remove from the heat.
  5. Preheat the oven to 180°C/ 350°F/ Gas Mark 4. 
  6. Cook the macaroni in a large pan of boiling water with a pinch of salt for 10-12 minutes or according to packet instructions. Drain in a colander and return to the pan.
  7. Fold in the cheese sauce with the cauliflower puree to the macaroni and transfer to an overproof dish. Bake in the oven for 20-25 minutes until bubbling and lightly golden.
  8. Serve straight to the table and arrange on plates to serve with the salad leaves.
