Abstract:

Small and Medium Enterprises (SMEs) constitute the vast majority of food businesses across the island of Ireland. A failure on their part to respond to consumer expectations for robust food safety standards will result in a loss in consumer confidence and subsequently of market share as well. To guard against this, SMEs involved in food and drink manufacturing, retail and catering must regard food safety as an opportunity to create competitive advantage, rather than an onerous and costly burden.

The scope of this research was limited to Food Sector SMEs on the island of Ireland. The level of food safety knowledge and skills was investigated with a view to identifying any deficits and potential solutions that would facilitate greater compliance with their food safety obligations. The barriers to addressing these deficits were identified and these became the focus of the report. It is envisaged that the findings of the report will assist safefood in the development of resources and tools suited to SME food safety needs.
