This booklet was designed as an educational resource for caterers and serves as a practical guideline for serving customers who may have a food allergy, a food intolerance, coeliac condition or who may wish to avoid a particular food for other reasons. The booklet is intended to be used as part of the induction training of catering staff to increase their knowledge and awareness of this issue. The accompanying poster was designed as a quick reference resource for staff in a practical situation.
