Beef tacos with chilli sauce
Although they might look like finger food, tacos make for a hearty, filling meal. Great with a side serving of Spanish rice and refried beans, these tacos can be cooked and prepared in under an hour.
Serves four
Ingredients
• 1 packet taco shells
• 450g (1 lb) lean minced beef
• 1 tablespoon oil
• 1 medium-sized onion, finely chopped.
• 2 large cloves garlic, finely chopped
• 2 tablespoons mild chilli powder
• ½ teaspoon cumin
• ¼ cup Mexican salsa
• Juice from ½ a lime
• Salt and pepper to taste
Topping
• ½ cup Iceberg lettuce, chopped
• 1 large vine-ripened tomato, finely chopped
• 4 tablespoons soured scream
• ½ cup grated cheddar cheese
• ½ ripe avocado, sliced
• 1 small can chopped black olives
• 1 small white onion, finely chopped
Method
1. Wash your hands with warm, soapy water and put on a clean apron.
2. Heat the oil in a skillet.
3. Add the mince and brown, then add the onion and garlic. Continue cooking for a few minutes, stirring occasionally.
4. Add the chilli, cumin, salsa, lime, salt and pepper. Simmer for 20 minutes. Minced beef can contain the dangerous E. coli bacteria, so make sure you cook it thoroughly and there are no pink areas.
5. Heat the taco shells according to the instructions on the packet.
6. Place a small amount of lettuce in the base of the shell and spoon the mince onto it.
7. Add any or all of the toppings according to taste and serve immediately.
