Brussel sprouts with bacon
Sprouts as a traditional christmas veg are often overlooked and are not very popular with the kids! However when cooked in the right way they can be very tasty and full of flavour.
Serves 4-6
Ingredients
- 500g/18oz of peeled Brussels sprouts
- 100g/3oz of lean smoked bacon cut into strips
- 1 tbsp vegetable oil
- 1 clove of garlic (chopped into tiny pieces)
Method
Steam the sprouts above a covered pan of boiling water for 20mins or until soft but with still a little 'bite'. Cut one in half to check they are cooked all the way through.
Cut the bacon into very small strips- Put 1 tablespoonful of oil in a pan and fry until crispy brown add the chopped charlic and fry for 2 more minutes.
Take the steamed sprouts and add them into the large pan.
In the large pan, add in the brussel sprouts and gently fry altogether for a few minutes.
Heat an oven proof dish and keep warm inside until ready to serve alongside christmas dinner.
Brussels sprouts with apple and red onion
Ingredients
- 500 grams Brussels sprouts, cleaned and halved
- 2 red onions, finely sliced
- 2 apples, finely sliced
- lemon juice
- 1 Tbs. olive oil
- 1/2 cup vegetable bouillon
- 1/2 cup dry white wine
Instructions
- Clean the Brussels sprouts and cut them in half.
- Slice the red onions finely.
- Place the Brussels sprouts in a steamer and steam until al dente.
- Meanwhile.
- Saute the onion in the olive oil until the onion becomes glassy.
- Pour the vegetable bouillon and wine over the red onions and allow the ingredients to mix and cook down to half the amount of liquid. Remove from the heat.
- Slice the apples finely into a bowl with a bit of lemon juice so that they keep their color.
- Place the Brussels sprouts in a serving bowl.
- Pour the onion, bouillon wine mixture over the sprouts and mix well.
- Add the apples and once again mix.
- Season with salt and pepper to taste.
