Chicken on a stick
As easy as it sounds
This is an ideal snack food that can be rustled up while the kids are playing. Plus, it can be eaten on the go!
Ingredients - Serves 4 Adults
- 2 large chicken fillets
- 1 tablespoon olive oil
- 1 clove of garlic
- 1 whole lemon
- Wooden skewer sticks

Method
- Cut the chicken fillets into strips
- Place the skewers carefully lengthways down the chicken
- Grate or mince the garlic, juice the lemon and add the garlic and lemon juice to the oil
- Drizzle over each strip of chicken
- Preheat the oven to 180°C / 350°F / Gas mark 4
- Leave the chicken covered in the fridge to marinate while the oven heats up
- Bake for 15 to 20 minutes, turning the chicken occasionally so it cooks evenly
Serving Suggestions
Add tandoori spices to the chicken and once cooked add fruits like pineapple or mango and serve with a cool yogurt and cucumber dip for an exotic twist

Soak the wooden skewers for at least 30 minutes before cooking to avoid burning them
