Scrambled eggs are high in protein and wholegrain toast provides slow releasing energy, perfect snack for those busy days! This recipe is perfect as a light meal for one.


Ingredients - Serves 1 Adult

  • 1 slice of wholegrain bread
  • 1 medium egg
  • Salt and pepper, to taste

Method

  1. Toast the slice of wholegrain bread
  2. Mix the egg in a bowl with the pepper
  3. Pour the mix into a heated, non-stick pan
  4. Stir constantly for 2 minutes, or until the egg is fully cooked
  5. Serve over the toasted bread

Serving Suggestions

Serve this with baked beans, grilled tomatoes or mushrooms
