Homemade tomato salsa and rye crispbread
Suitable for vegetarians
This lunch is quick and easy to prepare as well as being both tasty and nutritious. This recipe would make a perfect, refreshing lunch on a warm, summers day.
Ingredients - Serves 1 Adult
- 2 medium tomatoes, finely chopped
- 1 scallion, finely chopped
- ½ tablespoon of fresh coriander, chopped
- 1 teaspoon of olive oil
- 1 pinch of cumin seeds
- 1 pinch of crushed chilli
- ½ clove of garlic, peeled and crushed or finely chopped
- ½ lime, juiced
- 2 rye crispbreads
Method
- Combine all of the ingredients in a bowl and mix gently
- Spread on the crispbread and enjoy
- Double or triple the ingredients for extra tomato salsa which can be covered and refrigerated and used again
Serving Suggestions
Serve with a mixed leaf salad.

This salsa recipe would also be great alongside a barbeque. If you like your salsa with a kick you can add a pinch more chilli to make it as spicy as you like.
