Ham, cheese and tomato tortilla

Ham, cheese and tomato sambo with a twist!


Ham, cheese and tomato sambos are an old favourite but can be a bit boring. Give them a new lease of life with this recipe.


Ingredients - Serves 1 Adult

  • 1 medium wholemeal flour tortilla/wrap
  • 1 dessertspoon of low-fat cream cheese
  • 2 slices of ham
  • 3 cherry tomatoes
  • 1 dessertspoon fresh basil leaves

Method

  1. Lay the tortilla out flat on a cutting board and spread the cream cheese from edge to edge
  2. Lay the ham slices in the middle of the tortilla
  3. Next chop the tomatoes into thin slices. 
  4. For that something extra, take a few of the fresh basil leaves and sprinkle them over the tomato
  5. Starting at the edge, roll the tortilla tightly until you have made a sausage shape. Cut into four pieces and pop into your lunchbox

Serving Suggestions

You could also use slices of roast beef or turkey instead of ham; and cucumber or peppers instead of tomatoes
