Sausage and sage stuffing

Christmas wouldn’t be Christmas without stuffing! This is our tried and tested recipe for making delicious stuffing


Ingredients - Serves 24 Adults

  • 900g / 2 lb of good quality sausage meat
  • 2 garlic cloves, peeled sliced
  • 1 medium onion, peeled diced
  • 3 slices of wholemeal bread
  • 1 medium egg, beaten
  • 1 tablespoon dried sage
  • 1 tablespoon water

Method

  1. Make breadcrumbs from the bread by cutting slices into quarters and blending in a food processor until small crumbs are created, or grate into breadcrumbs using a cheese grater
  2. Put the breadcrumbs, onion and sage in a large mixing bowl, add the water and mix thoroughly
  3. To this add the sausage meat, finely chopped garlic and egg and mix well
  4. Use this to stuff the cavity of the turkey to no more than 10% of the weight of the bird

Serving Suggestions

If you have any stuffing left over; grease a loaf tin and put the stuffing inside and roast in the oven until it is golden brown on the outside and there is no pink meat left in the middle
