Pork stir-fry

This recipe is a quick and easy one, which is great when you’ve had a busy day and want something fast and tasty for dinner!

Ingredients

  • 450g / 1lb of lean pork fillet
  • 1 clove garlic, finely chopped
  • 1 medium onion, finely chopped
  • 6 button mushrooms, thinly sliced
  • 1 pepper, thinly sliced
  • 2 medium carrots, thinly sliced
  • 1 tablespoon of reduced-salt soy sauce
  • 2 teaspoons of corn-flour
  • 1 dessertspoon of vegetable oil
  • 1 chicken stock cube dissolved in 150ml / ½ pint of boiling water or homemade chicken stock

Method

  1. Cut pork into thin slices
  2. Mix the 150ml / ¼ pint chicken stock with the soy sauce. Blend the corn-flour with 1 dessertspoon of water add to the soy sauce and mix to a smooth paste
  3. Heat the oil in a large frying pan. Add the pork and fry until well browned
  4. Add the onion, garlic and carrot to the pan and fry for 2 to 3 minutes
  5. Then add mushrooms and peppers to pork mixture and continue frying for 2 to 3 minutes
  6. Pour the stock mixture into the pan and bring to the boil, stirring all the time. Simmer for 5 minutes

Serving suggestions

Serve with brown rice  or noodles as it helps keep your fuller for longer
