Casserole is a family favourite


Casserole is a family favourite, its tasty filling and easy to make. It can be frozen in individual portions making homemade meals as convenient as any fast-food!


Ingredients - Serves 4 Adults

  • 675g / 1½ lb of lean pork, diced
  • 1 medium green pepper
  • 1 dessertspoon of vegetable oil
  • 1 medium onion, peeled and chopped
  • 6 mushrooms, sliced
  • 1 teaspoon curry powder
  • ½ teaspoon pepper
  • 50g / 1 oz. of plain flour
  • 1 x 400g / 14 oz. tin of chopped tomatoes
  • ½ teaspoon of mixed herbs
  • 275ml / ½ pint of vegetable stock, or 1 vegetable stock cube mixed with 275ml / ½ pint of warm water
  • Salt and pepper to taste

Method

  1. Pre-heat the oven to 160°C / 325°F / Gas Mark 3
  2. Remove stalks and seeds from the pepper and chop it up
  3. Heat the oil and fry the onion, pepper and mushrooms for 3 minutes. Transfer to a casserole dish
  4. Add the curry powder to the flour, and coat the pork in this mixture
  5. Fry the coated pork for 5 minutes and then put into the casserole dish with the vegetables. Add tomatoes, herbs and vegetable stock
  6. Cover tightly and cook in the pre-heated oven for 1½ hours
