Banana and walnut loaf
Suitable for vegetarians
This bread is a sweet treat with some unexpected twists like its rich and nutty flavour courtesy of the banana, honey and walnut.
Ingredients - Serves 12 Adults
- 75g / 2½ oz. of low-fat, soft margarine
- 75g / 2½ oz. of caster sugar
- 2 tablespoons of honey
- 225g / 8 oz. of plain flour
- 2 teaspoons of baking powder
- 4 medium ripe bananas
- 50g / 2 oz. of chopped walnuts
- 1 medium egg
Method
- Preheat the oven to 180°C / 350°F / Gas mark 4
- Beat the egg and add to the margarine and sugar in a large mixing bowl
- Sift in the flour
- Whisk the mixture quickly
- In a separate bowl, mash the bananas with a fork
- Add the bananas and the walnuts and mix again
- Put the dough into a loaf tin and smooth off the top
- Bake the loaf in the middle of the oven for just under an hour
- You’ll know the bread is ready when the loaf rises and when a skewer or knife put into the loaf comes out clean
Serving Suggestions
A half slice is perfect with a cup of tea after lunch or dinner

Don’t be tempted to add butter or jam as this bread is already sweet!
