Chilli Con Carne

This simple recipe makes mincemeat a bit more exciting and is ideal for a quick student dinner...if you like it hot then make this meal as spicy as you want by adding more chilli powder!

Ingredients

  • 1lb/450g of minced beef/lamb
  • 1 onion, finely chopped
    carrots, peas, peppers, mushrooms etc
  • 1/2 tin tomatoes
  • 1 beef cube
  • 1 teaspoon chilli powder
  • 2 dessertspoons tomato sauce
  • 1 clove of garlic (crushed)
  • 1/2 tin of kidney beans or 1 tin of baked beans
  • 1 dessertspoon of flour

Instructions

  1. Chop onion and garlic.
  2. Dissolve beef cube in a 1/4 pt/150ml of boiling water.
  3. Put minced beef/lamb in dry frying pan. There is sufficient fat in mince for frying. Cook for 20-25 minutes over a low heat until well browned, stirring all the time.
  4. Add onions and garlic to the pan and cook for 2 to 3 minutes. Sprinkle on the flour and chilli powder and cook for 1-2 minutes, stirring all the time.
  5. Add beef stock, tomato sauce and tinned tomatoes. Bring to the boil.
  6. Add kidney beans/baked beans to mince. Simmer for 20 minutes.
